Summer is finally coming! We’ve made it past Memorial Day, so of course it’s the unofficial start to summer. Yay! As many of you know school is winding down, or maybe it’s already over where you live, you lucky guys! I don’t know about you but I’m already in summer mode. Working in a school you can definitely tell the kids are just itching to get out of their seats and have fun. Luckily we have some fun field trips and events planned so we all get a little break πŸ˜‰

This recipe is perfect for those times when you need an easy and quick dessert that is done in no time at all. It’s essentially no bake, depending upon the type of pudding you want to use. If you’d like to make the pudding from scratch, more power to ya, go for it. Want to go the instant route, I totally won’t judge you for it at all.

You don’t even have to turn on the oven (stovetop only) to enjoy the cool, sweet vanilla pudding layered with tart, ripe and juicy summer berries. The red, white, and blue colors also make it a perfect Fourth of July dessert too. What a perfect start to summer!

Easy Vanilla Pudding Parfaits (makes 2 large or 4 small parfaits)

1 box vanilla pudding (I love the Organics Brand)

1 pint strawberries, cut into thin slices

1 pint of blueberries

1. Prepare pudding according to box directions. Place pudding in the refrigerator to chill Β for about 1 hour before preparing the parfaits (this is to make sure the berries don’t sink into the pudding).

2. Scoop pudding until it fills about 1/4 of the serving glass. Layer sliced strawberries onto the pudding followed by blueberries. Repeat the sequence again, making another layer.

3. Serve, or return to the refrigerator if you’d like your parfait to be extra cool!

    The perfect summer treat, indeed! I love love love parfaits! I remember when I was a kid I used to buy them all the time in my local grocery. But making my own tasted so much better! haha. I love the pudding idea, I’ve only had it with yogurt. I must try this soon πŸ™‚
