These donuts take strawberry banana straight to breakfast in donut form!
I’ve decided to make a dessert that was on the healthier side. Really, any dessert with fruit is healthy right?? Even though they are donuts you shouldn’t feel guilty about eating these because they are baked, not fried in oil. Skip the trip to your local donut shop and make your own!
I was inspired by one of my favorite healthy, fruity, flavor combinations: strawberry and banana. Recently, I’ve been loving banana in all my desserts! What goes better with banana than strawberries? The best part about these treats, is they are baked and have low quantities of butter and sugar. Go get yourself a donut pan, and start baking away!
Cake flour gives these donuts a tender, fluffy texture. Also, adding a little bit of nutmeg really gives them that “donut shop” flavor. Make sure to use a ripe banana, it provides a lot of extra sweetness. Use up those bananas that are ripening quickly, you know the ones that are all spotted, brown, and have seen better days. The spottier and browner the better! They add so much more flavor. Dried strawberries provide a subtle berry flavor, without added moisture, and a splash of pretty pink color.
These donuts can be made two ways: glazed and unglazed. If you prefer treats on the sweeter side, go ahead and glaze away to your heart’s content. Want to go only slightly sweet? Go ahead and dust them with powdered sugar, I wouldn’t say no to that!

Strawberry Banana Donuts (Makes 6 donuts)
½ cup banana mashed (one medium sized banana)
1 egg lightly beaten
½ teaspoon vanilla extract
¼ cup granulated sugar
1 tablespoon butter, melted
¼ tablespoon milk (I used skim)
1 cup cake flour
½ teaspoon salt
1 teaspoon baking powder
¼ teaspoon nutmeg
¼ dried strawberries chopped finely (extra for garnish if desired)
1 cup powdered sugar
3 tablespoons of water
Dash of vanilla
1. Preheat oven to 350º. Spray a donut pan with non-stick cooking spray. In a large bowl beat the egg, milk, melted butter, and vanilla extract with a whisk. Add the mashed banana and combine.
2. In a small bowl whisk the cake flour, salt, baking powder, and nutmeg. Using a rubber spatula combine the dry ingredients into the wet, stirring until just mixed. Add the dried strawberries until incorporated.
3. Using a tablespoon, spoon the batter into prepared donut pan, filling cavities close to the top. Bake 10-12 minutes or until donut springs back to the touch. Cool in pan for 5 minutes before removing.
4.To make the glaze mix the powdered sugar, water, and vanilla together with a fork until there are no lumps. Dip the donuts in the glaze and place on a cooling rack to set. Sprinkle with additional chopped strawberries if desired.
